Restaurants at the Heart of Goa’s Tourism Push, Says Minister at NRAI Summit 2025


Goa’s culinary prowess took centre stage at the inaugural NRAI Indian Restaurant Summit 2025, hosted for the first time in the coastal state at Dona Paula. In a powerful keynote address, Goa’s Tourism Minister Rohan Khaunte described the restaurant industry as the “economic backbone” of the state’s tourism economy and an essential pillar of its regenerative tourism model. The three-day summit, themed ‘Serving The Future’, brought together more than 2,500 delegates, 60+ speakers, 500+ brands, and 300+ partners from across India and abroad.

Minister Khaunte emphasized that Goa is actively repositioning itself as a destination that goes “beyond beaches,” embracing culture, heritage, adventure, and sustainability. He underscored that regenerative tourism in Goa is built on four pillars — people, community, economy, and environment — and that food is central to this journey. At the summit, the minister also felicitated iconic Goan food institutions such as Longuinhos, Café Central, Café Tato, Mr Baker, Sher e Punjab, Jila Bakery, Goenchin, and Titos, as well as legendary chefs including Urbano Rego and the late Caridade Alfonso.

Organized by the National Restaurant Association of India (NRAI), the summit featured panel discussions and workshops highlighting the transition of Goa from a nightlife-centric beach destination to a serious global culinary hub. Topics included regional cuisine, cocktail culture, the evolution of café life, and the emergence of Indian cities as global food destinations. Global and national culinary icons including Roni Mazumdar, AD Singh, Ashneer Grover, Riyaaz Amlani, Ashish Tulsian, Manish Mehrotra, Ranveer Brar, Saransh Goila, and Vicky Ratnani brought international insight to the event.

Panaji Mayor Rohit Monserrate was also in attendance, showing support for the evolving role of food in Goa’s socio-economic development. NRAI Goa Chapter head Prahlad Sukhtankar noted that Goa’s offline restaurant industry now accounts for 55% of the sector — far ahead of the national average of 43% — a sign of stronger compliance, structure, and long-term growth potential.

By honouring local cuisine and encouraging innovation rooted in tradition, the summit reaffirmed that for Goa, food is not just about dining — it is about culture, community, and sustainable economic empowerment.

🌿 A Passion Born in a Goan Kitchen

Vali’s journey began in his childhood kitchen, where his mother and grandmother stirred up magic during family feasts and village celebrations. It wasn’t just the aromas or the spices—it was the love behind every dish that left a mark. Watching them cook kindled a fascination in young Valerian. While other kids played outside, he was inside experimenting with flavors, unknowingly laying the foundation for his culinary path.

🎓 The Culinary Climb

His professional journey started at Alcon Culinary School (then Victor Exotica, now Radisson Candolim), where he mastered the fundamentals. He worked as a commis chef, participated in hotel pre-openings, collaborated with celebrity chef Shailendra Kekde, and even managed seven cloud kitchen outlets during the COVID era, showcasing multiple cuisines from a single source.

Later, his culinary curiosity led him to the Royal Caribbean Cruises, where he further honed his skills in global and indigenous cuisines. From traditional Goan food to modern fusion, every experience added a new dimension to his cooking.

Chef Valerian proudly champions Goan cuisine, presenting it with a twist while respecting its roots.

One memorable lesson came when experimenting with Balchão. A sweeter tomato purée accidentally altered the dish. But instead of tossing it, Vali added vinegar and spices—resulting in a pleasantly surprising twist that customers ended up loving. For him, mistakes are just hidden opportunities in the kitchen.

Vali credits his mother and grandmother as his first culinary inspirations. Leicester, UK – 21st August 2025: A historic cultural milestone will be marked in Leicester this August with the city’s first-ever Ekvottachem Fest – a people-powered celebration of Goan identity, togetherness, and tradition. Held at John Bosco Hall from 6:00 pm onwards, the festival is the brainchild of globally renowned Festakar Marius Fernandes, the visionary behind over 100 grassroots cultural festivals around the world.

What is Ekvottachem Fest?

Rooted in the Goan word “ekvott”, meaning unity, the festival brings the Goan community together in a celebration that transcends borders. True to its ethos, the event is completely community-driven – with no sponsors, no VIP guests, and no commercial backing. Instead, it shines a spotlight on shared heritage, volunteer spirit, and cultural pride.

Festival Highlights Include:

  • Balcaoacho Gozalli – Goan-style chats capturing the essence of village balcaos (balconies), promoting intergenerational storytelling.
  • Kottiacho Nach – A vibrant traditional coconut shell dance conceptualised by Dr. Gwendolyn de Ornelas.

The Leicester edition marks Marius Fernandes’ 103rd community festival globally, and the third in the UK, under his visionary movement: “Festakar Without Borders”. Past editions have empowered communities across continents to celebrate their culture without the constraints of commercialisation.

Local cultural champions Espirito Roy Sequeira, Melba Fernandes, Elvina Maria Fernandes, Steven Gonsalves, and Jancia Da Silva Almeida have played a pivotal role in shaping and supporting this event.

Beyond the festivities, Ekvottachem Fest is a call to UK-based Goans – especially the youth – to reconnect with their language, roots, and traditions, while embracing the diversity and inclusivity of modern Leicester.

St. Mathias, Malar – The much-loved Malar Bonderam festival, hosted by the St. Mathias Sports Club, returns with a vibrant and inclusive celebration of Goan culture on Saturday, August 16, 2025, from 11:00 AM to 10:00 PM.

Founded in 1967, the St. Mathias Sports Club has consistently been at the heart of community life in Malar, and this year’s Bonderam is set to bring generations together in a day-long celebration of identity, unity, and tradition.

At a recent press conference in Panjim, Dr. Gwendolyn de Ornelas opened the event by introducing key figures behind the scenes. Former Club President Ivo Azavedo gave insights into the origins of Bonderam and its evolving cultural significance. Remy De Almeida, Vice President, emphasized engaging the youth, while Sports Secretary and former footballer Remes Gomes outlined robust safety measures.

Award-winning actress Anisha Menezes, representing the youth wing, shared that rehearsals began two months ago, and the younger generation is buzzing with excitement.
